Cheesy Egg Thingy

My dad makes the original cheesy egg thingy in a pan started on the stove and finished in the broiler. It usually contains only egg and cheese (sometimes meat) and a side of toppings, but I'm too lazy to do all the sides separate. This version was super simple and Derek loved it. Here's what's in it:
Carmelized Onions
Sausage links cut up
Apple cut up
7 eggs whisked with a squirt of milk and mustard.
Cheddar cheese on top (added halfway through the baking)
Baked at 400 til the middle is set.

(PS I did make a cake. It was yummy and I made Derek take the rest to work to give away. Thanks Kaykers for the cake flour tip. Mmmmm)

Worn Out!

Last weeks excitement has totally worn me out! The visit from the nephews, Shepherding group, SCORE!, dance rehearsals and performances, scurrying to finish all the costumes, the list goes one... Whew! All I want to do is nap! I'm feeling pretty good today and managed to clear and reload the dishwasher (trust me: that is an accomplishment!) and am totally thinking about making a cake. Something about cake just sounds yummy right now. I wonder if I have the ingredients to make one? I may have to foray upstairs and get started... that is if the dishwasher will kindly release my mixer bowl...

English Country Dance at Walnut Grove

The kiddos being silly :D
There is Raleigh's vest and brown jacket second from the left. I made Emma's gown (the green satiny one) way back in October. I wish it were in my size!
Here are the ladies jacket and Justice's vest and coat in action.
I love this tender moment between Emma and her dad Hank.
The whole group.

The Carolina English Country Dancers, of which I am a part, performed and taught the audience to dance at a wonderful Dinner Ball at Walnut Grove. We had so much fun!

Good News and Bad News

The good news is that I was able to visit Becca, Daylin, and Brady! I had so much fun hanging out with them :D

Daylin took this artistic series on the world from her view. I couldn't get her to understand using the viewfinder. ;)

And the bad news it that this is the last picture of note that my camera will ever take.

I bumped into the door and knocked the inner lens out. Whoops! The blurred edges are the camera taking a picture of the inner lens. Blog post may be boring and photo-less for awhile. Sigh.

I mopped.... finally!

My least favorite chore of all time is mopping (closely followed by cleaning the Microwave and the Refridgerator). I hate cleaning it with a mop and bucket because I just end up spreading the dirt around and I can't really scrub. So I got out a mixing bowl, a container of white vinegar, and a wash rag and began my hated chore. At least Moonbeam "helped".

Curious cat.
Hindering Progress. Yes those are my striped pj pants...

Sunday Date

We have a very fun morning/early afternoon since we decided to go to 5:30 service tonight. Derek took me to Conestee Nature Park for a little walk (with some birding on the side). Here's the handsome birder.

Here are the best finds of our morning hike.

This was not here the last time we visited Conestee. Busy beavers indeed!

This (as Derek informed me) is the Beavers Home. Did you know beavers can be as long as 4 feet?!

A turtle family enjoying the 70+ degree weather.

One of a pair of red shouldered Hawks who starting crying loudly and scampering about the sky at about noon. I can tell you first hand that this pair will be parents this spring...

After Conestee, I was taken on a wonderful inexpensive lunch date.

My sweet date holding the door for me (and making the "Do you really have to take pictures of everything? I'm hungry." Face)

My yummy lunch! Chicken sandwich and Caesar side salad.

My super cute date!

And I've saved the best for last. Isn't this photo of algae stunning?
